Sweet miso revisited

This is the sweet miso made in our workshop a year ago… I probably should have eaten by now, as it’s not meant to be aged so long!

And features a gross bit of mold on the surface.

But of course, after removing that top layer, we have deliciousness underneath… So amazing.
